Tasting Notes
The 2015 Pellegrini "Toboni Vineyard" Pinot Noir can best be characterized as the in-your-face, wild child of our line up of Pinot Noirs. The wine's amplified aroma exudes berry cobbler and carmelized sugar, followed by hints of shitake mushroom and caraway seeds. Flavors of succulent boysenberry, roasted pecans and cranberry leap from the framework of firm yet well-integrated tannins. For those with patience, this wine will stand up well to some cellar time.
Vineyard Notes
Toboni Vineyard / Oakwild Ranch was established by Joe and Mary Toboni in 2000 and is located around the corner from our Olivet Lane Estate. It is planted to Pinot Noir clones 667, 777, 115 and Pommard 5. Farming is managed expertly by the late Ulises Valdez's Valdez & Sons Vineyard Management Inc., whose intensive practices influence the site’s distinctive firm structure and flavor intensity. An ideal summer of moderate and consistent weather ended with a dramatic cooling trend just prior to harvest, resulting in a prolonged period of gradual ripening.
Winemaker Notes
Hand-harvested in the cool of the morning, after hand-sorting, the grape clusters were destemmed, with whole berries were tipped to a 5 ton open–top fermenter, where the assorted clones co-fermented following a five-day period of cold-soak. During fermentation, the fermenting must was punched down several times daily to achieve extraction. At the end of fermentation, the wine was drained directly by gravity to barrels. Barrel aging took place over 14 months. The end result was just three barrels of finished wine. Truly small batch.
